Sauteed zucchini with carrots and sausage (Bigos z cukinii)

Easy and quick to cook!  
Makes for a great side or even a light meal and it's sure to brighten your day!


3 medium zucchini, ends trimmed
300g carrots (about 3 cups after they are grated)
2 large tomatoes
300-400g favorite sausage (meatless Tofurky are great too, as an option for vegetarians)
1 tsp tomato paste (optional)
1 Knorr parsley cube
1 Maggi cube
1 tbsp olive oil
salt, black pepper and red pepper powder to taste (black pepper freshly ground, if possible)


Wash zucchini and cut both ends .
Grate them on the large grating holes.  
Place grated zucchini in a large bowl and stir in 1 tsp salt. Set aside for 10 minutes. Meanwhile, grate the carrots.
Heat olive oil in a large nonstick skillet and lightly sauté the carrots.
Add zucchini to the skillet along with tomatoes, tomato paste, parsley and Maggi cubes. Cook until all ingredients soften. Add slices of your favorite sausage.
Season to taste with salt, black pepper and red pepper powder.
Boil for few minutes.
Serve while hot.
