Blueberry Coffee Cake (Ciasto z borowkami)

4 cups fresh blueberries
3 cups all-purpose flour
1 cup cold unsalted butter (2 sticks)
1 medium egg
1 cup caster sugar
1 tsp baking powder
1/4 tsp salt
4 tsp potato starch
zest and juice of one lemon
1/2 cup caster sugar


Grease a 9×13 inch pan.
Preheat the oven to 375 degrees F (190 degrees C).
In a medium bowl, stir together 3 cups flour, 1 cup sugar and baking powder.
Mix in salt and lemon zest from one lemon.
Using fork, gently blend in the butter and egg. Dough should be a little crumbly.
Pat half of dough into the prepared baking pan.
In another bowl, stir together the sugar, potato starch and lemon juice.
Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
Bake in preheated oven for about 45 minutes (until the top is slightly brown). Let it cool in closed oven.
Serve cold.
