Vegetable salad (Salatka warzywna)

Traditional polish vegetable salad. Absolute must during Christmas, Easter or birthday celebration. Some people add favorite sausage, others apple, some skip leek... It is a personal preference. Just modify it to your taste.





 5 hard boiled eggs

 2 dill pickles

 1 leek (white part)

 1 small can of peas

 5 small carrots

 2 parsley roots

 1/2 of a small celery root

 3 large potatoes

 2 table spoons of mayonnaise

 salt and pepper to taste

1 tsp/tbsp yellow mustard (optional)



 Boil all the ingredients until soft , except pickles and leeks. Dice leeks and pickles. Cool the  vegetables and then peel and dice them  as small as you wish. Mix everything together. Add enough mayonnaise to blend everything together and salt and pepper to taste. Decorate salald with pieces of left (boiled) vegetables creative and use other things like boiled eggs, fresh parsley etc...
