Apple, almond and cranberry cake (Ciasto z jablkami, migdalami i zurawina)
Ingredients:
2 and 1/3 cup all purpose flour
1 and 1/4 cup peeled almonds
1 and 1/4 tsp nutmeg
½ cup powdered sugar
½ tsp baking powder
2 tsp cinnamon
230 g unsalted butter (cold and cut into cubes)
1 tsp vanilla extract
3 large egg yolks
Apple filling ingredients:
6 large green apples (washed, peeled and cut into thick slices)
juice from 1 small lemon
1 tsp cinnamon
40 g unsalted butter
1/4 cup brown sugar
1 tbsp potato starch
½ cup dried cranberries
In addition:
2 tbsp bread crumbs
3 egg whites
1 cup caster sugar (or more, depends on your taste)

Dough directions:
Mix almonds in a blender to a powder.
Combine "almond powder", flour, baking powder, spices and powdered sugar.
Add the butter, egg yolks and vanilla extract. Mix well. If the dough is too loose add a tablespoon of water if too wet - a tablespoon of flour.
Cover the dough with plastic foil and place it in a fridge for 30 minutes.
At this time start preparing the apple filling.
Apple filling directions:
Mix slices of apples with lemon juice.
In a large skillet place the butter, cinnamon and brown sugar.
Melt the butter and stir. Add apples and cranberries and mix well. Cook until most of the liquid evaporates and a rough apple sauce forms. ( for about 10 minutes).
Take out 2 - 3 tablespoons of juice from the pan, add potatoe starch and mix. Allow the filling to cool completely.

Move half of the dough onto buttered and covered with parchment paper rectangular form (around 15 x 13 inches = 23 x 33 cm )
Push it into the button with your fingers, spreading to cover bottom and sides. Sprinkle 2 tablespoons of bread crumbs.
Spread apple filling on the dough.
Pre-heat oven to 345 º F (175 º C).
Meanwhile, beat the egg whites. Gradually add powdered sugar, spoon after spoon. Spread the foam on apples. Grate remaining, cold dough on top of it.
Bake for about 50 minutes.
Remove, cut while still warm. Sprinkle with powdered sugar when it is cooled.
